Herb and Garlic Sweet Potato Fries

A wholesome and savory alternative.
|2 lb sweet potatoes, peeled, cut into wedges|
|2 tablespoons olive oil|
|Salt, to taste|
|Ground black pepper, to taste|
|1 teaspoon chopped fresh thyme|
|2 tablespoons chopped fresh Italian parsley|
|2 cloves garlic, finely minced|
- Preheat oven to 500° F.
- Coat a baking sheet with vegetable oil spray.
- In a large bowl, toss together sweet potatoes and olive oil. Place potatoes on prepared baking sheet, in one layer, then season generously with salt and black pepper.
- Bake for about 30 minutes, until golden brown, turning once during cooking.
- In a small bowl, mix together thyme, parsley and garlic. Sprinkle over sweet potato fries.
