Spicy Chicken and Tangerine Kabobs





Serves 4
Sweet, spicy and savory in all the right ways.
Ingredients:
2 lb boneless skinless chicken breast, cut into cubes |
2 red bell peppers, chopped |
4 tangerines, peeled and segmented |
1 onion, chopped |
4 tablespoons Cajun seasoning |
4 metal skewers |
1 tablespoon thinly sliced green onion |
Directions:
- Prepare grill for medium heat.
- While grill is heating, thread chicken, bell pepper, tangerine segment, and onion onto each skewer. Repeat until all ingredients are gone. Sprinkle skewers with Cajun seasoning.
- Place kabobs on grill rack and cook for about 10 minutes, turning kabobs occasionally while grilling.
- Garnish with green onions and enjoy!
