Grapefruit-Cilantro Salad





Serves 4
Ingredients:
4 tablespoons fresh pink grapefruit juice |
2 tablespoons olive oil |
3 teaspoons red wine vinegar |
1 teaspoon honey |
3 teaspoons fresh cilantro, minced |
4 cups torn Bibb lettuce |
2 medium grapefruits, red or pink variety, peeled and sectioned |
Directions:
- Whisk grapefruit juice, olive oil, red wine vinegar and honey in a bowl, then stir in cilantro.
- In a salad bowl, toss together the lettuce and grapefruit segments.
- Drizzle salad with dressing and toss gently to coat. Serve immediately.
