Easy Chopped Salmon Salad





Serves 4
Enjoy this heart healthy salad!
Ingredients:
2 cups lettuce |
2 teaspoons garlic, minced |
1/2 red onion, chopped |
2 tablespoons cilantro, chopped |
1 lb. fresh salmon filet |
2 tablespoons lemon juice, fresh squeezed |
1/2 Roma tomato, chopped |
1 teaspoon salt, more for taste |
1 teaspoon pepper, more for taste |
Directions:
- Preheat oven to 350° F.
- Add salt and pepper to salmon filet. Bake for 10 minutes on pan, cover top with foil.
- Remove salmon from oven and chill until cold. Chop salmon into small pieces then set aside.
- Mix together, lettuce, garlic, onion, cilantro, lemon juice, and tomato. Add salmon, gently toss and enjoy!
