Easy Watermelon Salad





Serves 12
A delicious and refreshing summertime treat.
Ingredients:
2 limes, juiced |
1/2 cup red onion, chopped |
4 cups watermelon, seeded, cubed |
1/4 cup kalamata olives, pitted |
1/4 cup fresh mint, finely chopped |
1/4 cup fresh parsley, finely chopped |
1/2 cup feta cheese, crumbled |
Directions:
- In a medium bowl, combine lime juice and onion; set aside for 10 minutes.
- Add watermelon, olives, mint and parsley to bowl with onion; gently stir. Cover with plastic wrap then place in refrigerator for 1 hour before serving.
- Sprinkle with cheese.
