Feta and Tomato Stuffed Chicken

Fresh, savory and absolutely delicious.
|4 boneless skinless chicken breasts|
|1 cup diced tomatoes|
|4 oz feta cheese|
|1 1/2 tablespoons minced fresh Italian parsley|
|2 teaspoons olive oil|
|Salt, to taste|
|Ground black pepper, to taste|
|4 tablespoons pesto|
|2 tablespoons vegetable oil|
- Lay chicken breasts on the cutting board. Cut along the center lengthwise about halfway into the chicken breasts. Set aside.
- Add the tomatoes, Feta cheese, Italian parsley and olive oil to a mixing bowl. Season with salt and pepper. Stir together until well combined.
- Stuff each chicken breast with an equal amount of the tomato mixture. Rub each chicken breast with a tablespoon of pesto.
- Pour the vegetable oil into a large pan and bring to medium heat. Once hot, place the stuffed chicken breasts in the pan. Cook until chicken is golden brown on both sides, about 20-30 minutes total cooking time.
