Barbecued Ribs with Chipotle
3 lb. pork baby back ribs, cut into 2-rib sections
cup barbecue sauce
2 tablespoons chipotle peppers in adobo sauce, chopped
2 tablespoons orange marmalade
Prepare grill for medium heat.
Mix barbecue sauce, chipotle peppers and marmalade together in a small bowl; set aside.
Place ribs in a large pot then add enough cold water to completely cover ribs. Place lid on pot and bring to a boil. Reduce heat to a simmer (medium-low) and cook ribs for 20 minutes. Drain.
Place ribs on the grill and cook, turning occasionally and brushing generously with the barbecue sauce mixture, for about 10 minutes or until cooked through to 160 degrees F.
