Ham and Potato Soup
5 lbs. russet potatoes, peeled and diced
2 cups ham, diced small
1 cup half and half
cup sour cream
Salt, to taste
Fresh ground pepper, to taste
Place potatoes in a large pot; add just enough water to cover. Place lid on pot and bring to a boil.
Once boiling, uncover and reduce heat to medium-high. Cook potatoes for 15 to 20 minutes.
Reduce heat to low; add ham and butter then season with salt and pepper. Add sour cream and half and half. Keep soup warm until ready to serve.
