Mandarin Chicken Salad

Serves 6

Light, fresh and totally delicious.


1 cup plain yogurt
2 tablespoons honey-mustard salad dressing
1/4 teaspoon grated orange peel
2 cups shredded cooked chicken
2 carrots, grated
2 stalks celery, diced
2 Red Delicious apples, chopped
1 can mandarin orange segments, drained, 7 oz.
1/2 teaspoon freshly ground black pepper
6 Boston lettuce leaves


  1. In a large bowl, combine yogurt, honey mustard salad dressing, and orange peel. Mix well.
  2. Add chicken, carrots, celery, apples, mandarin orange segments, and pepper to bowl. Mix well.
  3. Cover bowl with plastic wrap and chill for 30 minutes. Stir in peanuts. Arrange lettuce leaves on a serving plate. Spoon chicken salad on top. Serve immediately.
