Hatch Chile Stew

Serves 6

A little spicy with a whole lot of flavor.

Ingredients:

8 hatch chiles, peeled, roasted and chopped
2 lb boneless pork, cut into small cubes
1 cup broth, chicken or beef
1 jalapeno pepper, chopped
4 tomatoes, peeled and chopped
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon pepper
1/4 cup flour
1/2 teaspoon sugar
1 onion, chopped

Directions:

  1. Pour olive oil into a Dutch oven. Bring to medium-high heat. Add pork and cook until lightly browned. Add garlic, onion and flour to Dutch oven. Cook and stir for 2 minutes.
  2. Add jalapeno, tomatoes, hatch chiles, salt, pepper and sugar to Dutch oven. Stir together. Add broth. Lower heat to simmer and cook for 60-90 minutes.
