Creamy Greek Yogurt Macaroni Salad

Serves 6

A lighter and tastier version of this classic dish.


4 radishes, (quartered, sliced thin)
Salt, (to taste)
1/2 lb elbow macaroni
1 tablespoon mayonnaise
2 tablespoons dill pickle, (finely chopped)
2 hard boiled eggs, (egg whites chopped, yolk left whole)
2 celery stalks, (sliced thin)
1 cup Greek yogurt, (plain)
Ground black pepper, (to taste)


  1. Cook macaroni according to directions. Drain water and return pasta to pot.
  2. Mash 1 egg yolk with fork in a mixing bowl. Add lemon juice, Greek yogurt and mayonnaise to bowl. Stir ingredients together until smooth.
  3. Add egg mixture to pasta, stir together. Add celery, egg whites, dill pickle and radishes to pasta. Stir together. Season with salt and pepper and enjoy!
