Creamy Red Potato Salad
Summer picnics require potato salad.
|3/4 cup sour cream |
|1/2 cup mayonnaise |
|2 tablespoons white vinegar |
|1 1/2 teaspoons salt |
|1 teaspoon celery seed |
|6 red potatoes, rinsed, dried, peeled, cooked and cubed |
|3/4 cup sliced green onions |
|1/3 cup sliced radishes |
|1/4 cup chopped celery |
|3 hard-boiled eggs, peeled and chopped |
- Combine first 5 ingredients in a bowl.
- In a large bowl, combine potatoes, green onions, radishes, celery and hard-boiled egg.
- Add sour cream mixture to potato mixture and toss lightly to coat.
- Cover and chill for 1 hour before serving.
