Chopped Veggie Salad with Watermelon and Feta Cheese

Serves 4

Fresh, flavorful and fun to make. Thoroughly enjoy this delicious salad.

Ingredients:

1 lb plum tomatoes, (diced and drained)
1 1/2 cups watermelon, (diced and drained)
1 green bell pepper, (seeded and cut into 1/4" cubes)
1/2 English cucumber, (seeded and cut into 1/4" cubes)
1/2 cup radishes, (cleaned and thinly sliced)
3 tablespoon extra virgin olive oil
10 oz feta cheese, (crumbled or cubed)
2 green onions, (chopped)
1/4 cup fresh mint leaves, (thinly sliced)
1/2 cup Greek-style yogurt, (plain)
1 teaspoon oregano

Directions:

  1. Toss the tomatoes, watermelon, pepper, cucumber and radishes with 2 Tbsp. of the olive oil in a large bowl. Add half each of the cheese, green onions, and mint. Place the remaining cheese, green onions, mint, and oil in a processor. 
  2. Add the yogurt and oregano. Process just to blend. Season the dressing with salt and pepper and mix into the salad.
