Thai Fruit Salad

Serves 8 servings

Sweet, healthy and super easy to make.


1 1/2 cups fresh papaya, cubed
1 cup pineapple chunks
1 banana, sliced
1 cup mango, cubed
1 cup strawberries, sliced
1 cup fruit, (your preference)
for garnish starfruit slices
1/4 cup coconut milk
1 tablespoon lime juice, freshly-squeezed
2 tablespoon brown sugar or palm sugar


  1. Stir the last three ingredients together in a cup until the sugar dissolves and set aside. Place all the fresh fruit in a mixing bowl.
  2. Pour the dressing over and toss well to mix. Pour the fruit salad into a serving bowl, or into a prepared pineapple boat and garnish with the star fruit slices.
