Makes 1 pie
|1 quart fresh blueberries|
|4 Tbsp. whole-wheat flour|
|3/4 cup date sugaror substitute granulated sugar|
|1 Tbsp. sorghum or substitute light corn syrup|
|1/2 tsp. cinnamon|
|3 Tbsp. coconut, flaked|
- In a large bowl, mix blueberries, flour, sugar, sorghum and cinnamon. Pour into unbaked pie shell and bake at 350 degrees for 40 to 45 minutes. Garnish with coconut.
