Autumn Pear Salad

The perfect salad for Fall dinner parties.
|1 Bartlett pear|
|3 cups mixed greens|
|1/3 cup pomegranate arils|
|2 tablespoons pomegranate juice|
|1/2 tablespoon honey|
|1 teaspoon Dijon mustard|
|1 tablespoon lemon juice|
|1 tablespoon olive oil|
|Ground black pepper, to taste|
- Halve and core the pear, then cut each half in slices.
- Place mixed greens in a salad bowl. Add pear slices and pomegranate arils and toss together.
- Combine pomegranate juice, honey, Dijon mustard, lemon juice, olive oil and pepper in a saucepan. Bring to a boil on high heat. Once boiling, reduce heat to low and simmer. Stirring frequently for about 2 minutes.
- Pour the dressing over the salad, gently toss and enjoy.
