|4 tablespoons fresh pink grapefruit juice|
|2 tablespoons olive oil|
|3 teaspoons red wine vinegar|
|1 teaspoon honey|
|3 teaspoons fresh cilantro, minced|
|4 cups torn Bibb lettuce|
|2 medium grapefruits, red or pink variety, peeled and sectioned|
- Whisk grapefruit juice, olive oil, red wine vinegar and honey in a bowl, then stir in cilantro.
- In a salad bowl, toss together the lettuce and grapefruit segments.
- Drizzle salad with dressing and toss gently to coat. Serve immediately.
