Halibut Tacos with Guacamole Sauce





Serves 12
Easily one of the tastiest homemade fish tacos.
Ingredients:
4 halibut filets |
1 lime |
3 Haas avocados |
1 lemon |
1/2 teaspoon cayenne pepper |
1 cup plain yogurt |
1 teaspoon coarse salt |
2 Roma tomatoes, seeded and chopped |
2 scallions, thinly sliced |
1 heart romaine lettuce, shredded |
12 tortillas, 6-inch, corn or flour |
Extra-virgin olive oil, as needed |
Salt, to taste |
Pepper, to taste |
Directions:
- Preheat grill to high heat.
- Drizzle halibut with olive oil. Season fish with salt and pepper. Grill for 4-5 minutes on each side. Squeeze lime over the fish and remove from the grill. Using a fork, flake fish into large chunks.
- While the fish is cooking, combine avocado flesh, lemon juice, cayenne pepper, yogurt and salt in a blender or food processor. Mix until smooth. Transfer guacamole sauce to a bowl and stir in diced tomatoes and chopped scallions.
- Warm tortillas before assembling tacos. Place fish into the center of tortillas and cover with guacamole sauce. Top with shredded lettuce and enjoy!
