Cheese Ravioli with Sautéed Zucchini

Serves 4

Deliciously healthy and quick.


1 lb cheese ravioli
2 tablespoons olive oil
3 zucchini, rinsed, dried, trimmed and sliced into thin half-moons
1/2 teaspoon salt
1/4 teaspoon pepper
2 cloves garlic, peeled and thinly sliced
1/2 cup grated Parmesan


  1. Cook the ravioli according to package directions. Drain water in colander and return to pot.
  2. Heat oil in a large skillet over medium heat. Add zucchini and season with salt and pepper. Cook until just tender, about 4-5 minutes. Add the garlic; cook for 2 minutes.
  3. Add zucchini mixture and 1/4 cup of Parmesan to ravioli, tossing gently to combine. Serve ravioli with remaining Parmesan.
