Mandarin Chicken Salad

Light, fresh and totally delicious.
|1 cup plain yogurt|
|2 tablespoons honey-mustard salad dressing|
|1/4 teaspoon grated orange peel|
|2 cups shredded cooked chicken|
|2 carrots, grated|
|2 stalks celery, diced|
|2 Red Delicious apples, chopped|
|1 can mandarin orange segments, drained, 7 oz.|
|1/2 teaspoon freshly ground black pepper|
|6 Boston lettuce leaves|
- In a large bowl, combine yogurt, honey mustard salad dressing, and orange peel. Mix well.
- Add chicken, carrots, celery, apples, mandarin orange segments, and pepper to bowl. Mix well.
- Cover bowl with plastic wrap and chill for 30 minutes. Stir in peanuts. Arrange lettuce leaves on a serving plate. Spoon chicken salad on top. Serve immediately.
