Steak and Mushroom Sandwiches

Serves 6

A simple sandwich with big flavors.


1 lb flank steak, sliced thin
2 tablespoons vegetable oil
1 onion, sliced
2 Portobello mushrooms, trimmed and sliced thin
1 teaspoon salt
1 teaspoon dried oregano
6 hoagie rolls, split
8 oz mozzarella cheese, sliced
Pickled jalapeno slices, optional


  1. Heat vegetable oil in a wide skillet over medium-high heat. Add the onion and cook for 20 minutes, stirring occasionally, until browned.
  2. Once onions are browned, increase heat to high and add mushrooms, salt and oregano. Cook for 6 minutes, until mushrooms dark. Add beef and stir quickly and constantly until beef is no longer pink.
  3. Divide mixture among buns and top with sliced cheese. Serve with pickled jalapeno peppers, if desired. Enjoy!
