Steak and Mushroom Sandwiches

A simple sandwich with big flavors.
|1 lb flank steak, sliced thin|
|2 tablespoons vegetable oil|
|1 onion, sliced|
|2 Portobello mushrooms, trimmed and sliced thin|
|1 teaspoon salt|
|1 teaspoon dried oregano|
|6 hoagie rolls, split|
|8 oz mozzarella cheese, sliced|
|Pickled jalapeno slices, optional|
- Heat vegetable oil in a wide skillet over medium-high heat. Add the onion and cook for 20 minutes, stirring occasionally, until browned.
- Once onions are browned, increase heat to high and add mushrooms, salt and oregano. Cook for 6 minutes, until mushrooms dark. Add beef and stir quickly and constantly until beef is no longer pink.
- Divide mixture among buns and top with sliced cheese. Serve with pickled jalapeno peppers, if desired. Enjoy!
