Fabulous Fruit Bars

Serves 12 bars
A fun and extra fruity treat.
|1 1/3 cups flour|
|1/2 cup firmly packed brown sugar|
|1/3 cup quick-cooking rolled oats|
|1 teaspoon baking powder|
|2 egg whites, lightly beaten|
|1/3 cup milk|
|2 tablespoons vegetable oil|
|2 tablespoons light corn syrup|
|2 teaspoons vanilla extract|
|3/4 teaspoon grated orange peel|
|1 cup chopped dried apricots|
- Preheat oven to 350° F. Spray a 9-inch square baking pan with vegetable cooking spray.
- In a large bowl, combine flour, brown sugar, oats, and baking powder. Mix well.
- In a medium bowl, combine egg whites, milk, oil, corn syrup, vanilla, and orange peel. Mix well. Make a well in center of dry ingredients; add milk mixture and stir until just combined. Stir in figs. Spoon batter into prepared pan, smooth out the top.
- Bake until a toothpick inserted in the center comes out clean, about 25-30 minutes. Place pan on a wire rack and cool 10 minutes. Turn cake out onto rack and cool completely. Cut into bars and serve.
