Fabulous Fruit Bars

Serves 12 bars

A fun and extra fruity treat.


1 1/3 cups flour
1/2 cup firmly packed brown sugar
1/3 cup quick-cooking rolled oats
1 teaspoon baking powder
2 egg whites, lightly beaten
1/3 cup milk
2 tablespoons vegetable oil
2 tablespoons light corn syrup
2 teaspoons vanilla extract
3/4 teaspoon grated orange peel
1 cup chopped dried apricots


  1. Preheat oven to 350° F. Spray a 9-inch square baking pan with vegetable cooking spray.
  2. In a large bowl, combine flour, brown sugar, oats, and baking powder. Mix well.
  3. In a medium bowl, combine egg whites, milk, oil, corn syrup, vanilla, and orange peel. Mix well. Make a well in center of dry ingredients; add milk mixture and stir until just combined. Stir in figs. Spoon batter into prepared pan, smooth out the top.
  4. Bake until a toothpick inserted in the center comes out clean, about 25-30 minutes. Place pan on a wire rack and cool 10 minutes. Turn cake out onto rack and cool completely. Cut into bars and serve.
