Hatch Chile Stew

A little spicy with a whole lot of flavor.
|8 hatch chiles, peeled, roasted and chopped|
|2 lb boneless pork, cut into small cubes|
|1 cup broth, chicken or beef|
|1 jalapeno pepper, chopped|
|4 tomatoes, peeled and chopped|
|2 tablespoons olive oil|
|2 cloves garlic, minced|
|1 teaspoon salt|
|1/2 teaspoon pepper|
|1/4 cup flour|
|1/2 teaspoon sugar|
|1 onion, chopped|
- Pour olive oil into a Dutch oven. Bring to medium-high heat. Add pork and cook until lightly browned. Add garlic, onion and flour to Dutch oven. Cook and stir for 2 minutes.
- Add jalapeno, tomatoes, hatch chiles, salt, pepper and sugar to Dutch oven. Stir together. Add broth. Lower heat to simmer and cook for 60-90 minutes.
