Cilantro Chicken

Serves 4

A simple chicken recipe that’s full on flavor and a little spicy.

Ingredients:

4 skinless, boneless chicken breast halves
2 green bell peppers, cut into strips
1 red onion, cut into 1/4-inch wedges
2 tablespoons pickled jalapeno pepper, seeded and cut into thin strips
2 tablespoons fresh lime juice
2 tablespoons red-wine vinegar
1 tablespoons olive oil
2 tomatoes, cut into 8 wedges each
2 tablespoons chopped cilantro

Directions:

  1. In a shallow glass dish, combine chicken, pepper strips, onion, and jalapeno pepper. In a small bowl, combine lime juice, vinegar, and oil; mix well. Pour over chicken mixture; stir to coat. Cover dish with plastic wrap; refrigerate for 30 minutes.
  2. Preheat the broiler. Remove chicken and vegetables from marinade; place on a broiler pan. Discard marinade. Broil 3 inches from heat for 5 minutes.
  3. Using tongs, turn chicken and vegetables. Add tomatoes to pan. Broil until chicken is no longer pink in center and vegetables are slightly charred, about 5 minutes.
  4. Arrange vegetables on serving plates; top with chicken. Sprinkle with cilantro and serve.
