Crispy Baked Beet and Sweet Potato Chips

Serves 24 |
You’ll never look at potato chips the same way.
|1 sweet potato, (peeled and sliced thin)|
|Salt, (to taste)|
|2 beets, (peeled and sliced thin)|
|Olive oil cooking spray|
- Preheat oven to 350° F.
- Grease 2 baking sheets with cooking spray.
- Arrange beets and sweet potato slices on baking sheets. (Do not overlap) Sprinkle salt over tops.
- Place baking sheets in oven and bake for 15-20 minutes. Flip chips, season with salt and place back in oven to bake for an additional 15-20 minutes.
- Remove form oven and let cool. (Chips will become crisp as they cool)
