Nectarine and Spinach Salad

A sweet and crisp salad that’s great any night of the week.
|1 bag baby spinach|
|1/4 ground black pepper|
|1 shallot, (thinly sliced)|
|2 nectarines, (pitted and cut into wedges)|
|2 teaspoons olive oil|
|2 tablespoons orange marmalade|
|1/4 cup slivered almonds|
|2 tablespoons white balsamic vinegar|
|1/4 teaspoon salt|
- Pour shallots and orange marmalade in a microwave-safe bowl. Cook for 1 minute on high.
- Stir in salt, white balsamic vinegar, black pepper and olive oil.
- Toast almonds in a skillet on medium heat. Set aside.
- Place baby spinach in a salad bowl, add marmalade mixture and marmalade mixture. Toss together and enjoy.
