Fresh Tomato Salad

A healthy choice for summer lunches and dinners.
|2 tablespoons crushed garlic|
|1 cucumber, sliced|
|2 tablespoons white wine vinegar|
|1 green bell pepper, chopped|
|5 tomatoes on the vine, diced|
|Salt, to taste|
|Ground black pepper, to taste|
|1/2 cup basil, chopped|
|1 onion, chopped|
|1/2 cup parsley, chopped|
- In a salad bowl, combine garlic, cucumber, white wine vinegar, tomatoes, green bell pepper, basil, onion and parsley. Toss together.
- Season with salt and pepper, toss again and then refrigerate.
