Zesty Slow Cooked Potato and Chicken Stew

Serves 6

A simple recipe with the perfect spices to bring out the best flavors.


5 cups chicken broth
1 teaspoon salt
1 teaspoon oregano
3 carrots, (diced)
1 teaspoon smoked paprika
4 Russet potatoes
2 stalks celery
1 lb chicken thighs
1 can crushed tomatoes
1/2 cup chicken marinade, (peeled and cubed)
1/4 teaspoon ground black pepper
1 yellow onion, (diced)


  1. Place chicken into the crock-pot. Cover with chicken broth, salt, oregano, carrots, smoked paprika, Russet potatoes, celery, crushed tomatoes, chicken marinade, ground black pepper and yellow onion.
  2. Turn to low heat, cook for 8 hours.
  3. Remove chicken from pot, shred with forks and place back into pot.
  4. Stir stew together and spoon in bowls.
