Southwestern Style Egg Rolls

A fun variation to the classic appetizer.
|6 egg roll wraps|
|6 slices Monterey Jack cheese|
|6 green chilies|
- Pour 1/2 inch of oil in a large skillet. Heat oil until bubbling.
- Cut open each chile lengthwise. Place a slice of cheese in each chile. Put chile in the middle of a flattened egg roll wrapper. Roll the chile up, tucking in all four corners. Moisten fingers and pinch corners shut.
- Place egg rolls in skillet and cook for 3 minutes. Egg rolls should become golden brown on all sides. Repeat process until all egg rolls are finished.
