Easy Chopped Salmon Salad

Enjoy this heart healthy salad!
|2 cups lettuce|
|2 teaspoons garlic, minced|
|1/2 red onion, chopped|
|2 tablespoons cilantro, chopped|
|1 lb. fresh salmon filet|
|2 tablespoons lemon juice, fresh squeezed|
|1/2 Roma tomato, chopped|
|1 teaspoon salt, more for taste|
|1 teaspoon pepper, more for taste|
- Preheat oven to 350° F.
- Add salt and pepper to salmon filet. Bake for 10 minutes on pan, cover top with foil.
- Remove salmon from oven and chill until cold. Chop salmon into small pieces then set aside.
- Mix together, lettuce, garlic, onion, cilantro, lemon juice, and tomato. Add salmon, gently toss and enjoy!
