Salad Wraps With Tasty Tempeh

A super healthy high protein snack, that’s incredibly easy to make and is bursting with flavor.
|1 cup water|
|1/4 teaspoon black pepper|
|1/4 teaspoon salt|
|1/2 teaspoon paprika|
|1 package tempeh, (cut into 24 pieces)|
|2 cups spinach|
|1 cup romaine lettuce, (shredded)|
|4 tortillas, (whole-wheat preferred)|
|2/3 cup cherry tomato, (sliced)|
|3 tablespoons lemon juice|
|1/4 cup feta cheese, (crumbled)|
|2 tablespoons olive oil|
|2 tablespoons yogurt, (plain)|
|1 garlic clove, (minced)|
|2/3 cup cucumber, (sliced)|
- Heat skillet to medium-high and add 1 tablespoon oil, coat skillet. Place in tempeh and sauté 4 minutes. Add in water and lemon juice, reducing temperature to medium, simmer for 10 minutes. Flip contents once.
- Mix together yogurt, salt, garlic, and paprika in a bowl. Then add remaining oil, spinach, tomato, lettuce, cheese, cucumber and pepper.
- Warm tortillas, then spread yogurt mix over each tortilla. Layer on 1/4 of veggie mix and add 6 tempeh pieces. Roll tortilla and cut in half.
- Repeat process and ready to serve!
