Creamy Red Potato Salad

Serves 6

Summer menus require potato salad, and this great recipe delivers in taste and texture.

Ingredients:

3/4 cup sour cream
1/2 cup mayonnaise
2 tablespoons white vinegar
1 1/2 teaspoons salt
1 teaspoon celery seed
6 red potatoes, rinsed, dried, peeled, cooked and cubed
3/4 cup sliced green onions
1/3 cup sliced radishes
1/4 cup chopped celery
3 hard-boiled eggs, peeled and chopped

Directions:

  1. Combine first 5 ingredients in a bowl.
  2. In a large bowl, combine potatoes, green onions, radishes, celery and hard-boiled egg.
  3. Add sour cream mixture to potato mixture and toss lightly to coat.
  4. Cover and chill for 1 hour before serving.
