Quick and Easy Romaine Salad

Perfect for a simple lunch salad, or great for kicking off the main meal.
|2 cups romaine lettuce|
|3 tablespoons lemon juice|
|3 tablespoons water|
|1 tablespoon olive oil|
|3 tablespoons Dijon mustard|
|2 cucumbers, (peeled, seeded and chopped)|
|1/2 red onion, (peeled and diced)|
|8 cherry tomatoes|
- In a small bowl, whisk together mustard, lemon juice, water and olive oil.
- In a salad bowl, toss together romaine salad blend, cucumbers and red onion.
- Pour dressing atop salad, toss to coat then serve.
