Chopped Veggie Salad with Watermelon and Feta Cheese

Fresh, flavorful and fun to make. Thoroughly enjoy this delicious salad.
|1 lb plum tomatoes, (diced and drained)|
|1 1/2 cups watermelon, (diced and drained)|
|1 green bell pepper, (seeded and cut into 1/4" cubes)|
|1/2 English cucumber, (seeded and cut into 1/4" cubes)|
|1/2 cup radishes, (cleaned and thinly sliced)|
|3 tablespoon extra virgin olive oil|
|10 oz feta cheese, (crumbled or cubed)|
|2 green onions, (chopped)|
|1/4 cup fresh mint leaves, (thinly sliced)|
|1/2 cup Greek-style yogurt, (plain)|
|1 teaspoon oregano|
- Toss the tomatoes, watermelon, pepper, cucumber and radishes with 2 Tbsp. of the olive oil in a large bowl. Add half each of the cheese, green onions, and mint. Place the remaining cheese, green onions, mint, and oil in a processor.
- Add the yogurt and oregano. Process just to blend. Season the dressing with salt and pepper and mix into the salad.
