Asian Chopped Salad

Fully enjoy this healthy, light and flavorful salad.
|2 chicken breasts, (cooked anddiced)|
|1 red bell pepper, (cored and chopped)|
|1 snow pea, (sliced)|
|1 carrot, (shredded)|
|1/2 cup almonds, (coarsely chopped)|
|1/2 cup green onions, (sliced)|
|18 water chestnuts, (drained and chopped)|
|1 ginger, (fresh, grated)|
|Salt, (to taste)|
|Ground black pepper, (to taste)|
- Combine the first seven ingredients in a medium bowl and toss well to combine.
- Whisk together the vinegar and sugar in a separate bowl until the sugar dissolves.
- Add the oil, ginger and salt and pepper to taste and combine. Pour over the salad and toss.
