Reduced-Fat White Sauce

Makes 3 Cups
|6 tablespoons all-purpose flour, free of lumps|
|3 cups 1% milk|
|1/4 teaspoon nutmeg, ground|
|1 large egg, beaten to blend|
|1 teaspoon butter|
|1/3 cup Parmesan cheese, grated|
- Place flour into a medium saucepan set over medium heat. Slowly add 1 cup milk to saucepan, whisking constantly until mixture is smooth. Slowly add remaining 2 cups milk and nutmeg; whisk for about 10 minutes, until mixture begins to boil and thicken.
- Remove saucepan from heat. Add egg, butter and Parmesan to saucepan; whisk until cheese is melted. Season sauce with salt and black pepper.
