Blueberry-Coconut Coffee Cake

Serves 2 cakes

This supremely coffee cake is great any time of the day.

Ingredients:

2 cups flour
1 cup sugar
1 tablespoon baking powder
1/4 teaspoon salt
1/2 cup shortening
2 eggs
1 cup milk
2 cups fresh blueberries
1 cups flaked coconut

Directions:

  1. Preheat oven to 375° F.
  2. Combine flour, sugar, baking powder and salt in a bowl. Cut in shortening until crumbly.
  3. In a small bowl, combine eggs and milk; stir into crumb mixture just until moistened. Fold in blueberries.
  4. Pour batter into two greased 9" round baking pans. Sprinkle with coconut.
  5. Bake for 25 minutes or until a toothpick inserted near the center comes out clean. Serve warm.
