Arugula-Romaine Salad with Chicken and Grapefruit

Serves 4


2 cups romaine lettuce, chopped
1 quart arugula
2 cups rotisserie chicken, chopped
1 cup shaved fennel
3 large grapefruit, cut, peel and remove outer white membrane from 2 grapefruit
1/3 cup extra virgin olive oil
2 tsp. sugar
1/2 tsp. salt
1/2 tsp. black pepper
3/4 cup pistachios


  1. Place romaine and arugula in a large serving bowl.
  2. Add chicken, fennel and grapefruit slices to bowl.
  3. Juice remaining grapefruit into a bowl, and then add olive oil, sugar, salt and black pepper; whisk until combined. Drizzle over salad; gently toss to coat.
  4. Top salad with toasted pistachios, if desired.
