Arugula-Romaine Salad with Chicken and Grapefruit

|2 cups romaine lettuce, chopped|
|1 quart arugula|
|2 cups rotisserie chicken, chopped|
|1 cup shaved fennel|
|3 large grapefruit, cut, peel and remove outer white membrane from 2 grapefruit|
|1/3 cup extra virgin olive oil|
|2 tsp. sugar|
|1/2 tsp. salt|
|1/2 tsp. black pepper|
|3/4 cup pistachios|
- Place romaine and arugula in a large serving bowl.
- Add chicken, fennel and grapefruit slices to bowl.
- Juice remaining grapefruit into a bowl, and then add olive oil, sugar, salt and black pepper; whisk until combined. Drizzle over salad; gently toss to coat.
- Top salad with toasted pistachios, if desired.
